Shamrock Sandwiches

Ingredients
Better Then Cream Cheese, 8 oz (Soy based cream cheese, non-dairy)
Vegan Mayonnaise, 2 Tbsp
Dijon Mustard, 6 tsp (2 tbsp)
Corn beef, 2.5 oz or pressed n smoked tofu works well
Dill weed, fresh, 10 sprigs
Bread, rye, 16 oz (can use any GF bread)
Onions, raw, 2 tbsp chopped

Directions
In a large bowl beat the cream cheese, mayo and mustard until smooth.

mix corn beef or tofu with the onion n dill

if you have a shamrock cookie cutter use it to cut out two shamrocks from each slice of bread – if not then just divide the bread into two half’s

spread 1 to 2 tbsp of mixture on the bottom slice of bread add top back and serve.
