Quinoa and Black Bean Bowl

Ingredients:

  • 1 cup cooked quinoa
  • 1 can black beans, drained and rinsed
  • 1/2 cup corn kernels
  • 1/2 cup diced tomatoes
  • 1/4 cup diced red onion
  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • Salt and pepper to taste

Instructions:

  1. Mix quinoa, black beans, corn, tomatoes, and red onion in a bowl.
  2. Drizzle with olive oil and lime juice, then season with salt and pepper.
  3. Toss to combine.
