Well we all start the year off differently this year N and I started it off with fresh fruit before going to bed. But for breakfast I chose to make for us Quinoa with Apple’s and Cinnamon.

Quinoa with Apple and Cinnamon
1 1/3 cups of water
1/2 cup of Quinoa
1 medium Apple
1 tsp of Cinnamon
2 tsp of vegan butter
Dice up the apple leaving the skin on.
In a saucepan add 75% of the apple and taking 2 tsp of vegan soy free butter warm up the apple in the pan (about 5 minutes) when ready add in the water and quinoa.
Bring water to a boil with the quinoa and diced apple in a saucepan of medium size.
Turn the heat to low and let simmer uncovered until done and all the water has been absorbed (takes about 15 to 30 minutes depending on type of stove used).
Remove from the heat and cover.
Let sit for about 5 minutes before uncovering and using a fork fluff the quinoa then spoon into 2 bowls top with remaining apple n any other garnish you like such as nuts and or fresh berries.
