Gluten-Free Vegan Waffle Sticks, great as a snack, on the go breakfast option and party item

Ingredients
Dry
Sorghum Flour, 180 grams
Teff flour, 30 gram
Potato starch, 60 gram
Tapioca Starch, 30 gram
Baking Powder, 2 tsp
Baking Soda, 1 tsp
Xanthan Gum, 1 tsp

Wet
Becel – Oil, 80 mL
Rice Dream Enriched Vanilla Rice Milk, 350 mL mixed with Apple Cider Vinegar, 1 tbsp
Warm Water, 350 mL (add more as needed to have the batter to make it to your liking)

Tips
You don’t have to use rice milk, or even soy milk or any milk you can use in place of “milk” warm water just make sure to still use the vinegar.

These freeze well and can keep in the freezer for a good week so prefect for making a head and freezing to be taken out during your work week and popped into your toaster just like any sore gotten instant waffle option. Also good for school snacks served cold with jams or other preferred options.

Directions
Combine the dry ingredients in a medium mixing bow – making sure that they are well combined (I like to put them into a big freezer lock bag and shake until I feel its combined enough).

Add the oil (can can use coconut oil if preferred), “milk” mixed with the vinegar and warm water. If you like your waffles on the sweet side now is the time to add a tbsp or two of your preferred sweetener such as honey, maple syrup, etc.

Combine together the wet and dry ingredients until well blended and all lumps are gone. Now if the batter feels a little to thick you can add in a tbsp of warm water at a time until the batter reaches your desired consistency.

Heat your waffle maker as you would normally (following its instructions)

Scoop out the batter (we use a tablespoon to measure it into each waffle cavity) into the waffle maker wells as directed by the maker of the device cook according to the device instructions.

Take out and repeat until batter is gone – to keep the waffle sticks warm you can put them in the oven at 200F to keep them warm on a wire rack just try to keep them separated or they might go a bit mushy on you.

Once finished with all the batter you can serve them communal style with an array of dipping sauces/syrups and condiments. Our fav around here is real Maple Syrup or Peanut Butter and Jam, but dipping them into greek yogurt is also an option as is serving them at a party with a fondu dish (cheese or chocolate).
