Chicken and Vegetable Bake
Ingredients:
- 2 chicken breasts
- 1 cup baby carrots
- 1 cup Brussels sprouts, halved
- 2 tbsp olive oil
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions:
- Preheat oven to 375°F (190°C).
- Place chicken breasts and vegetables on a baking sheet. Drizzle with olive oil and season with thyme, salt, and pepper.
- Bake for 25-30 minutes, until chicken is cooked through and vegetables are tender.

Quinoa and Black Bean Bowl
Ingredients:
- 1 cup cooked quinoa
- 1 can black beans, drained and rinsed
- 1/2 cup corn kernels
- 1/2 cup diced tomatoes
- 1/4 cup diced red onion
- 2 tbsp olive oil
- 1 tbsp lime juice
- Salt and pepper to taste
Instructions:
- Mix quinoa, black beans, corn, tomatoes, and red onion in a bowl.
- Drizzle with olive oil and lime juice, then season with salt and pepper.
- Toss to combine.
