Tuna Salad Lettuce Wraps
Ingredients:
- 1 can tuna, drained
- 1/4 cup diced celery
- 1/4 cup diced red onion
- 2 tbsp olive oil mayonnaise
- 1 tbsp lemon juice
- Salt and pepper to taste
- Lettuce leaves
Instructions:
- Mix tuna, celery, red onion, mayonnaise, lemon juice, salt, and pepper in a bowl.
- Spoon tuna mixture into lettuce leaves and serve.

Scrambled Eggs with Veggies
Ingredients:
- 2 eggs
- 1/4 bell pepper, diced
- 1/4 onion, diced
- 1/2 cup spinach
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions:
- Heat olive oil in a skillet over medium heat. Add bell pepper and onion, cook until softened.
- Add spinach and cook until wilted.
- Beat eggs in a bowl, then pour into the skillet. Cook, stirring frequently, until eggs are set.
- Season with salt and pepper.
