Sweet Potato and Black Bean Tacos

Ingredients:

  • 2 sweet potatoes, peeled and diced
  • 1 can black beans, drained and rinsed
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • Corn tortillas
  • Toppings: diced tomatoes, lettuce, salsa

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potatoes with olive oil, cumin, and chili powder. Spread on a baking sheet and roast for 25 minutes, until tender.
  3. Warm black beans in a pot over medium heat.
  4. Serve sweet potatoes and black beans in corn tortillas with desired toppings.
