Ingredients:
- 2 sweet potatoes, peeled and diced
- 1 can black beans, drained and rinsed
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tsp chili powder
- Corn tortillas
- Toppings: diced tomatoes, lettuce, salsa
Instructions:
- Preheat oven to 400°F (200°C).
- Toss sweet potatoes with olive oil, cumin, and chili powder. Spread on a baking sheet and roast for 25 minutes, until tender.
- Warm black beans in a pot over medium heat.
- Serve sweet potatoes and black beans in corn tortillas with desired toppings.
