Ingredients:
- 4 bell peppers, tops cut off and seeds removed
- 1 cup cooked quinoa
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
Instructions:
- Preheat oven to 375°F (190°C).
- Mix quinoa, black beans, diced tomatoes, cumin, and chili powder in a bowl. Season with salt and pepper.
- Stuff the bell peppers with the mixture.
- Place peppers in a baking dish and bake for 25-30 minutes, until peppers are tender.
