Ingredients:
- 2 eggs
- 1/4 bell pepper, diced
- 1/4 onion, diced
- 1/2 cup spinach
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions:
- Heat olive oil in a skillet over medium heat. Add bell pepper and onion, cook until softened.
- Add spinach and cook until wilted.
- Beat eggs in a bowl, then pour into the skillet. Cook, stirring frequently, until eggs are set.
- Season with salt and pepper.
