Ingredients:
- 1 cup quinoa
- 2 cups water
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 red onion, diced
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 tbsp lemon juice
Instructions:
- Preheat oven to 400°F (200°C).
- Cook quinoa according to package instructions.
- Toss vegetables with olive oil, salt, and pepper. Roast in the oven for 20-25 minutes.
- Mix roasted vegetables with cooked quinoa and drizzle with lemon juice.
