Lunch: Lentil & Rice Bowl

  • Ingredients:
    • 1/2 cup cooked lentils
    • 1/2 cup cooked rice
    • 1/2 cup frozen peas
    • 1/2 cup diced tomatoes
    • 1 tbsp gluten-free soy sauce
    • 1 tsp sesame oil
    • 1 green onion, chopped
  • Instructions:
    1. Cook lentils according to the package instructions
    2. Cook rice according to package instructions
    3. Microwaves peas, and diced tomatoes for about 2 minutes (until desired texture).
    4. Stir in soy sauce, sesame oil, and green onions.
    5. Serve warm.
