Lunch: Lentil & Rice Bowl
- Ingredients:
- 1/2 cup cooked lentils
- 1/2 cup cooked rice
- 1/2 cup frozen peas
- 1/2 cup diced tomatoes
- 1 tbsp gluten-free soy sauce
- 1 tsp sesame oil
- 1 green onion, chopped
- Instructions:
- Cook lentils according to the package instructions
- Cook rice according to package instructions
- Microwaves peas, and diced tomatoes for about 2 minutes (until desired texture).
- Stir in soy sauce, sesame oil, and green onions.
- Serve warm.
