Lunch: Chickpea & Tofu Stir-Fry
- Ingredients:
- 1/2 block firm tofu, cubed
- 1/2 cup canned chickpeas, drained and rinsed
- 1/2 cup frozen peppers
- 1/2 cup broccoli
- 1 tbsp gluten-free soy sauce
- 1 tsp sesame oil
- 1/2 cup cooked rice
- Instructions:
- Air fry tofu at 375°F for 10 minutes.
- In a pan, heat sesame oil and stir-fry vegetables for 5 minutes.
- Add chickpeas and soy sauce, cook for another 3 minutes.
- Serve over cooked rice.
