Lunch: Chickpea & Tofu Stir-Fry

  • Ingredients:
    • 1/2 block firm tofu, cubed
    • 1/2 cup canned chickpeas, drained and rinsed
    • 1/2 cup frozen peppers
    • 1/2 cup broccoli
    • 1 tbsp gluten-free soy sauce
    • 1 tsp sesame oil
    • 1/2 cup cooked rice
  • Instructions:
    1. Air fry tofu at 375°F for 10 minutes.
    2. In a pan, heat sesame oil and stir-fry vegetables for 5 minutes.
    3. Add chickpeas and soy sauce, cook for another 3 minutes.
    4. Serve over cooked rice.
