Ingredients:
- 1 cup lentils
- 1 carrot, diced
- 1 celery stalk, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 4 cups vegetable broth
- 1 tsp cumin
- Salt and pepper to taste
Instructions:
- Heat olive oil in a pot over medium heat. Add carrot, celery, and onion. Cook until softened.
- Add garlic and cook for another minute.
- Add lentils, vegetable broth, and cumin. Bring to a boil, then reduce heat and simmer for 30 minutes.
- Season with salt and pepper.
