Banana Coffee Bliss – Ninja CREAMi

Ingredients:

  • 2 small or 1 large overripe banana (fresh or frozen)
  • 3/4 cup flaxseed milk (unsweetened or vanilla works)
  • 1–2 teaspoons instant coffee or espresso powder (adjust to strength)
  • 1–2 tablespoons maple syrup (optional — depends on your sweet tooth and banana ripeness)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • (Optional) dash of cinnamon or nutmeg for extra warmth

Instructions:

  1. Mash the banana well, then mix with all remaining ingredients in a blender or with an immersion blender until very smooth. No lumps or coffee clumps!
  2. Pour into your Ninja CREAMi pint, level the top, and freeze for at least 24 hours.
  3. Spin using the Lite Ice Cream function.
  4. If it comes out crumbly (which banana-based ice creams sometimes do), add 1 tbsp flax milk and hit Re-Spin.
