Baked Tilapia with Roasted Vegetables

Ingredients:

  • 2 tilapia fillets
  • 1 cup cherry tomatoes, halved
  • 1 zucchini, sliced
  • 1 bell pepper, sliced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 lemon, sliced

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Place tilapia fillets on a baking sheet. Arrange cherry tomatoes, zucchini, and bell pepper around the fish. Drizzle with olive oil and season with salt and pepper.
  3. Lay lemon slices over the fish.
  4. Bake for 20-25 minutes, until fish is cooked through and vegetables are tender.
