Ingredients:
- 2 salmon fillets
- 1 cup cooked quinoa
- 2 cups fresh spinach
- 2 tbsp olive oil
- 1 lemon, sliced
- Salt and pepper to taste
Instructions:
- Preheat oven to 375°F (190°C).
- Place salmon on a baking sheet. Drizzle with olive oil and season with salt and pepper. Lay lemon slices over the salmon.
- Bake for 15-20 minutes, until salmon is cooked through.
- Sauté spinach in a pan with a bit of olive oil until wilted.
- Serve salmon with quinoa and spinach.
