Happy Victoria Day

Fireworks on Victoria Day in the Beach area of TorontoWell it was an interesting day that is for sure, started of rather slow but as the day progressed it got faster and faster – mostly do to the fact that both N and I where in the kitchen cooking up dinner and dessert for the occasion.

We actually did two completely different meals, one for my Dad and Uncle and one for us. For dad and my uncle I cooked up their fav Meatloaf with whipped potatoes and mixed veggies. For N and I we had a take on our old classic Cabbage Cassarol but the twist was it was 100% veggie based no meat what so ever, we also added collared greens to it to up the nutritional content and if I do say so myself it turned out rather well and well I know I liked it very much.

After dinner was over N and I relaxed for a bit, talking with a friend down in the US before heading off to see the fireworks at Ashbridges Bay – the display was interesting but the number of twits setting off their own fireworks and acting like nut jobs put a damper to the events to degrees, though the fireworks display itself was alright, I managed to get a few good shots with my cell while N actually taped the whole thing (and should be posting it to youtube in short order).

  1. I was wondering on a similar note,, July 4 is fast approaching – the day we traditionally celebrate the birth of our nation. Thousands of homes fly OId Glory and our patriotism is exhibited on every block. But why is it only one or two days each year that we remind ourselves that we are all part of the greatest nation on earth?
