Lunch: Black Bean & Corn Rice Bowl
- Ingredients:
- 1/2 cup cooked rice
- 1/2 cup black beans, drained and rinsed
- 1/4 cup frozen corn
- 1/4 cup diced tomatoes
- 1 tbsp gluten-free soy sauce
- 1 tsp sesame oil
- 1 green onion, chopped
- Instructions:
- Cook rice according to package instructions
- cook black beans and corn according to package instructions
- cook diced tomatoes in the microwave for around 2 minutes to heat though.
- Stir in soy sauce, sesame oil, and green onions before serving.
