Lunch: Black Bean & Corn Rice Bowl

  • Ingredients:
    • 1/2 cup cooked rice
    • 1/2 cup black beans, drained and rinsed
    • 1/4 cup frozen corn
    • 1/4 cup diced tomatoes
    • 1 tbsp gluten-free soy sauce
    • 1 tsp sesame oil
    • 1 green onion, chopped
  • Instructions:
    1. Cook rice according to package instructions
    2. cook black beans and corn according to package instructions
    3. cook diced tomatoes in the microwave for around 2 minutes to heat though.
    4. Stir in soy sauce, sesame oil, and green onions before serving.
