Chickpea Salad

Ingredients:

  • 1 can chickpeas, drained and rinsed
  • 1/2 cucumber, diced
  • 1/2 bell pepper, diced
  • 1/4 red onion, diced
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions:

  1. Mix chickpeas, cucumber, bell pepper, and red onion in a bowl.
  2. Drizzle with olive oil and lemon juice, then season with salt and pepper.
  3. Toss to combine.
