Ingredients:
- 6 eggs
- 1/2 cup diced bell pepper
- 1/2 cup diced spinach
- Salt and pepper to taste
Instructions:
- Preheat oven to 375°F (190°C). Grease a muffin tin.
- Beat eggs in a bowl and stir in bell pepper and spinach. Season with salt and pepper.
- Pour egg mixture into muffin tin, filling each cup about 3/4 full.
- Bake for 20-25 minutes, until eggs are set.
