Egg Muffins

Ingredients:

  • 6 eggs
  • 1/2 cup diced bell pepper
  • 1/2 cup diced spinach
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 375°F (190°C). Grease a muffin tin.
  2. Beat eggs in a bowl and stir in bell pepper and spinach. Season with salt and pepper.
  3. Pour egg mixture into muffin tin, filling each cup about 3/4 full.
  4. Bake for 20-25 minutes, until eggs are set.
