Breakfast: Tofu Scramble with Gluten-Free Toast

  • Ingredients:
    • 1/2 block firm tofu, crumbled
    • 1/4 cup frozen peppers
    • 1/4 cup diced onions
    • 1 tbsp nutritional yeast (optional)
    • 1/2 tsp curry powder
    • 1 tsp gluten-free soy sauce
    • 1 tsp sesame oil
    • 2 slices gluten-free bread
  • Instructions:
    1. Breakup the block of tofu in whatever method you like best that its crumbly and heat in the pan (you can use oil if needed/wished)
    2. add the peppers, onions, and sweat them down with the tofu
    3. add the soy sauce, sesame oil, and curry powder as a finishing touch and combine well
    4. Toast the gluten-free bread and serve with the tofu scramble.
