Banana Oat Pancakes

Ingredients:

  • 1 cup gluten-free oats
  • 1 ripe banana
  • 1 cup almond milk (or any non-dairy milk)
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions:

  1. Blend all ingredients in a blender until smooth.
  2. Heat a non-stick skillet over medium heat and pour small amounts of batter to form pancakes.
  3. Cook until bubbles form on the surface, then flip and cook until golden brown.
  4. Serve with maple syrup or fresh fruit.

Roasted Chickpeas

Ingredients:

  • 1 can chickpeas, drained and rinsed
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt to taste

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Toss chickpeas with olive oil and spices.
  3. Spread on a baking sheet and roast for 20-25 minutes, until crispy.
