Scrambled Eggs with Veggies

Ingredients:

  • 2 eggs
  • 1/4 bell pepper, diced
  • 1/4 onion, diced
  • 1/2 cup spinach
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions:

  1. Heat olive oil in a skillet over medium heat. Add bell pepper and onion, cook until softened.
  2. Add spinach and cook until wilted.
  3. Beat eggs in a bowl, then pour into the skillet. Cook, stirring frequently, until eggs are set.
  4. Season with salt and pepper.

Baked Salmon with Quinoa and Spinach

Ingredients:

  • 2 salmon fillets
  • 1 cup cooked quinoa
  • 2 cups fresh spinach
  • 2 tbsp olive oil
  • 1 lemon, sliced
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Place salmon on a baking sheet. Drizzle with olive oil and season with salt and pepper. Lay lemon slices over the salmon.
  3. Bake for 15-20 minutes, until salmon is cooked through.
  4. Sauté spinach in a pan with a bit of olive oil until wilted.
  5. Serve salmon with quinoa and spinach.
