Turkey Meatballs with Spaghetti Squash

Ingredients:

  • 1 spaghetti squash
  • 1 lb ground turkey
  • 1 egg
  • 1/4 cup gluten-free breadcrumbs
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 jar marinara sauce

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Cut spaghetti squash in half and remove seeds. Place cut side down on a baking sheet and bake for 35-40 minutes.
  3. Mix ground turkey, egg, breadcrumbs, Italian seasoning, salt, and pepper in a bowl. Form into meatballs and place on a baking sheet. Bake for 20-25 minutes.
  4. Heat marinara sauce in a pot over medium heat.
  5. Use a fork to scrape the spaghetti squash into strands. Serve meatballs over spaghetti squash with marinara sauce.
