Pratie Soup with Chives and Smoked Salmon

This is a form of a potato soup, but with a little bit of a twist. If you are diabetic this is safe when it comes to carbs and protein, at least to me that is the case, as all things go with a diabetic what is good for one isn’t good for all so adapt as necessary.

Ingredients
2 tbsp of Vegan Becel
1 tbsp of Olive Oil
3 Leeks trimmed and thinly sliced
3 cloves of Garlic
1 large Onion – finely chopped
3 Large Potatoes (diced, peel left on)
4 cups (1L) of Chicken Broth (reduced sodium)
2 tbsp of Fresh Chopped Chives
1/2 lb (225g) of Salmon

Directions
Melt the butter and oil in a large saucepan over medium heat

add the leeks, garlic and onion and saute, stirring occasionally until the vegetables are softened, about 5 minutes

Do not allow veggies to brown

add the potatoes and broth, bring to a boil, reduce the heat, cover and let simmer for about 25 minutes, stirring now and then

when the potatoes are quite soft, use a hand held blender to puree the soup (or in small batch use any other form of pureeing that you have open to you) until relatively smooth

wipe the saucepan clean, return the soup to the pan and add sea salt and pepper to taste (optional).

If soup is thicker then you wish, add a little milk and simmer until heated though

Serve hot, garnished with the chives and smoked salmon
